Amaretto flavored fruit cooked in parchment paper for an easy tasty dessert

Parchment baking is a great way of cooking many things: fish, meat and even pasta.
Recently I posted a recipe which I had in a restaurant of fish cooked in parchment paper. It was ever so delicious and I cooked fish in this way over and over again. I love this method of cooking.
You can also cook fruit in paper, it helps enhancing its fresh flavour as it leaves the fruit moist and delicious, the flavors become stronger and more pronounced.
This is an easy way to make a quick last minute dessert. You make a simple sauce with butter and crushed amaretti biscuits, you pour it over the fruit and place it in the oven for a few minutes. This is delicious served with a scoop of vanilla ice cream!
Use different types of fruit: peaches are fab cooked in the oven so is pineapple. You can cook different types of fruit as well at the same time.
- Prep Time : 15 minutes
- Cook Time : 7 minutes
Ingredients
- fresh fruit (I chose apples and pears) - 2
- butter - 30 g - 1/8 cup
- brown sugar - 1 tbsp
- amaretti biscuits - 5 or 6
- lemon juice
- parchment paper
Instructions
I have used apples and pears.
Wash and slice the apples and pear without peeling them; squeeze some lemon juice over them. Tear off a piece of parchment paper large enough for you to be able to wrap the fruit and roll the edges.
In a sauce pan melt the butter with the sugar and the crushed amaretti biscuits and cook for a couple of minutes. Pour it over the fruit. Wrap it up in the paper and bake it in the oven at 200C or 390F for 5 minutes.
Serve with a scoop of vanilla ice cream or fresh cream.

I’ve been using a lot of parchment paper recently, Alida…It seems to be foolproof which is a huge help! I haven’t tried fruit yet but I will now. What a delightful idea using the Amaretto flavored biscuits. I LOVE Amaretto:)

Amaretto is a classic Italian flavour which never seems to go out of fashion. I also love to add amaretto liquor to flavor cakes as well.
