Apple and Olive Oil Cake, healthy and light

Yesterday when I picked up the children from school I brought this cake for them just like my mum used to do for me. How can you ever forget mum's cakes?

I have changed mum's original recipe and I swapped butter for olive oil which would make any cake much lighter. Summer is on its way and we want to keep nice and trim!

I only put 5 tbsp of olive oil in the mixture, the apples will make sure the cake will be nice and moist anyway. This is not too sweet either. I have used brown sugar but you could replace the sugar for honey if you prefer. Honey changes the texture a little but it will be just as nice. My grandma always used honey in all her cakes, with grandad being a beekeeper she used to make the most of her delicious organic honey!

She thought that was normal, she never realized how lucky she was.

  • Cook Time : 45 minutes

In a bowl mix the eggs with the sugar, the oil and the lemon zest.

Peel and slice the apples into thin slices.

Add half of them to the bowl with the mixture and the flour; mix well. Add a few tbsp of milk, enough to make a smooth semi-runny texture.

Put the mixture onto a round greased baking tray (measuring approx 22 cm or 8.6 inch diameter) and lay the remaining apple slices on top. Sprinkle with brown sugar and cook it at 150C or 300F for 45 minutes.

Check with the toothpick if the cake is ready. If it is still wet inside leave it in the oven a little longer. Sprinkle with powdered sugar before serving (optional).

    Another wonderful recipe! This “Apple Cake” looks delizioso! A simple recipe plus a light and healthy one as well. I like this cause it is not gooey and can easily be transported. Anything with apples is my kind of dessert. I agree with you dear friend, there is nothing like your mom’s cakes or cooking. Your grandmother used honey which must have been so flavorful, especially with your granddad being a beekeeper. Wow, as you said she sure was lucky all right. Thanks for sharing..Have a great week…

    My favourite cakes, puddings etc are those containing fruit. Apple cakes are delicious and if made with olive oil then they are a healthier choice.

    Oh yes, this looks delicious. Using less fat sounds like a good idea. I have sometimes used apple puree instead of fat in cakes, but they don’t generally last as long.

    I am now dreaming about making all my cakes with honey – what bliss that would be. We’ve had our bees for 3 years now and still not been able to take any honey. One day – maybe!

      Great idea. Cakes would be so much healthier with honey. Making honey is quite labour intensive and not always easy. I didn’t know you had bees, that’s great!
