A simple, quick and very easy apple cake. This is a recipe I have on an old book of mine and I have made it through the years over and over again.

My children absolutely love it and I had to stop them stuffing themselves this afternoon to make sure they had their dinner as well.

Of course, inside I feel really good, I do love it when my family likes my food (and I am sure most food bloggers will agree with me on this), it is so rewarding and being at home whilst raising my children has given me the time to practice more and to "cook until you drop"! What a pleasure!

  • Prep Time : 25 minutes
  • Cook Time : 45 minutes

Instructions

In a bowl work the butter to a creamy consistency then add the sugar, the vanilla extract, eggs and salt. Stir well.
Gradually add the flour, the lemon juice and zest and stir well. The pastry should fall heavily from the spoon, so not too runny not too thick.
Cut and slice the apples and stir them with 2 tbsp of sugar in a bowl.

Pour the pastry in a greased baking tray, lay the apple slices on top all next to each other and cook it in a preheated oven at 175C.
Cook for 40-45 minutes.
Take the cake out of the oven and turn it off. Stir the jam with 2 tbsp of hot water and brush it on the cake. Put it back in the oven still warm and leave it there for a further 10 minutes.
Take it out and dust it with icing sugar. Slice the cake into rectangles.
