Baked Fish with tomatoes and herbs

If you are looking for an easy, tasty and light recipe for the weekend, this one is for you!

Today I made a recipe I really liked on Tesco's website: baked fish with tomato and herbs. This is a perfect example of Mediterranean food perfectly suitable even if you are on a diet.

You can use any type of white fish you like and it only takes 15 minutes to prepare.  Definitely a great recipe if you don't have much time on your hands and you want something healthy!

  • Prep Time : 15 minutes
  • Cook Time : 20 minutes

Instructions

Preheat the oven to gas mark 6, 200°C, fan 180°C.

Fry the onion with a tbsp of olive oil for a minute

Add the garlic, stir, then add the tinned (or fresh) tomatoes and let them bubble away together. Add the cherry tomatoes and simmer for a few minutes, until they begin to soften

Add half the oregano or basil and stir. Season and pour the sauce into a large baking dish. If you have bought one whole fillet chop it into chunks

Lay the fish on top and scatter over the remaining herbs. Season and lay a piece of sliced lemon on each fillet. Sprinkle some olive oil and bake for 15-20 minutes or until the fish flakes when you press it

Great with green salad and bread or boiled potatoes. I find it even better with an extra drizzle of olive oil too!

    Hi Alida! I will try this out……for sure! Hubby and I are on a diet and the recipe is perfect for the diet we are doing….I am super excited because he has never done a diet with me. I am always trying to lose about 5kg….but never succeed because he comes around with cake and cookies and wine. Meaning…when I try to diet, he offers me that stuff! GGGGRRRRR…still I guess it is nice that he does not care about my weight. Thanks again for the great recipe and have a good weekend! Baci.

      Hubby loves you so much that he does not care about your weight.. that’s lovely! It is hard to resist those Italian pasticcini maybe paired with some fizzy prosecco…yum! I would be much heavier if I lived in Italy but hey.. who cares you only get one life don’t you?

    Made this last night, using ling and added a pesto sauce cube as I have used up all my basil. Went down a treat! I received the parcel of San Daniele ham and cheese. Thought I would use the ham to wrap small sticks of halloumi cheese and bake in a hot oven or Delia’s Pan-roasted Italian onions with San Daniele and shaved Grana Padano – decisions, decisions!
