Baked potato pizza for dinner

Baked potato pizza for dinner

By 08/06/2016

"What's for dinner mamma?"

" Pizza"

" Oh no..again!"

I was horrified and pretty much annoyed when I heard my children saying that.

They were clearly bored with my weekly pizza (carefully handmade with love of course!) so I just stopped making it altogether (honestly I don't know how you can ever get bored with pizza, can you?).

Instead I came up with something different: a potato bake pizza flavour (still pizza eh?!). Years ago I used to make something similar with fish and they used to like it. So I tried doing the same but with mozzarella and tomato sauce.

It was a success and now they seem to be asking for it all the time.. (until they will get bored again but at least this forces me to be creative).

Boil the potatoes, sliced them, add mozzarella, tomato sauce and oregano or basil and anything else you like (like ham, mushrooms, salami) and then bake again.

It is tasty and if you are gluten intolerant just leave the breadcrumbs out or use gluten free ones instead.

And dinner is sorted.

  • Prep Time : 20 minutes
  • Cook Time : 60 minutes

Instructions

Cook the potatoes for 30 minutes in salty water with their skins on, drain and peel them. Slice them and put half of them in a baking tin lined with parchment paper measuring about 20 cm or 8 inch. Drizzle with olive oil.

cooked potatoes

Put the tomato sauce on the potatoes and spread it well, add the mozzarella cut into pieces and sprinkle with dried oregano.

cooked potatoes with topping

Cover up with the remaining potatoes, sprinkle with breadcrumbs and drizzle with olive oil. Cook at 180C or 350F for 30 minutes or until golden on top.

    Dear Alida,
You are a genius! Kids get so bored with food, but Pizza? I agree who could get bored with that delicious pie. I guess children can. What a terrific idea to use potatoes instead of pizza dough. I love the way it looks..I think this pie would be delicious and very easy. Yummy! Thanks for sharing..Have a wonderful rest of the week, dear friend!
    Hugs Dottie 🙂 x

Yes I must say I was quite disappointed that my children were bored with my pizza but I know they will be asking for it again in a month or so. I love to have my weekly pizza. Hope you are well xxx

This is such a simple idea, but not something I have ever thought to do. I am potato obsessed at the moment and of course pizza is amazing, so this sounds perfect.

    • Alida

Glad you like it Dannii. Recently I have been enjoying creating new recipes with potatoes. Hubby is English and loves them.

What a fabulous dish, comfort food at its best. Considering that the always yummy pizza dough is much higher in calories than cooked potato, then this dish is a winner when you want to cut back on some calories. Will make! Grazie x

Now that’s being creative Alida! Dare I say, I’m not much of a pizza lover but, potatoes well, that’s a whole different story, lol…

Sometimes when my kids would ask “what’s for dinner?” I would ask them, what they planned on making for us, lol…they came up with some tasty doozies, lol…

    Thanks for sharing, Alida…
