"What's for dinner mamma?"
" Oh no..again!"
I was horrified and pretty much annoyed when I heard my children saying that.
They were clearly bored with my weekly pizza (carefully handmade with love of course!) so I just stopped making it altogether (honestly I don't know how you can ever get bored with pizza, can you?).
Instead I came up with something different: a potato bake pizza flavour (still pizza eh?!). Years ago I used to make something similar with fish and they used to like it. So I tried doing the same but with mozzarella and tomato sauce.
It was a success and now they seem to be asking for it all the time.. (until they will get bored again but at least this forces me to be creative).
Boil the potatoes, sliced them, add mozzarella, tomato sauce and oregano or basil and anything else you like (like ham, mushrooms, salami) and then bake again.
It is tasty and if you are gluten intolerant just leave the breadcrumbs out or use gluten free ones instead.
And dinner is sorted.
- Prep Time : 20 minutes
- Cook Time : 60 minutes
Cook the potatoes for 30 minutes in salty water with their skins on, drain and peel them. Slice them and put half of them in a baking tin lined with parchment paper measuring about 20 cm or 8 inch. Drizzle with olive oil.
Put the tomato sauce on the potatoes and spread it well, add the mozzarella cut into pieces and sprinkle with dried oregano.
Cover up with the remaining potatoes, sprinkle with breadcrumbs and drizzle with olive oil. Cook at 180C or 350F for 30 minutes or until golden on top.
