Bellini cocktail

A really refreshing and summery cocktail is Bellini, a combination of pureed white peach and Prosecco or other sparkling wine.
It was created in 1948 by Giuseppe Cipriani, owner of Harry's Bar in Venice to mark the occasion of an exhibition of Giovanni Bellini.
It is very easy and quick to prepare. You should have one third of peach purée and two thirds of Prosecco or other sparkling wine. Make sure the flutes and the wine are well chilled.
- Prep Time : 10 minutes
Ingredients
- 4 ripe peaches + 1 to garnish - (best white ones but yellow ones will be OK too)
- 1 bottle prosecco or sparkling wine - ( chilled)
- crushed ice - (optional)
Instructions
Put the flutes in the fridge to chill.
Choose 4 ripe and soft peaches. Peel them and remove the stone.
Place them in a blender with the crushed ice (optional) and purée them until totally smooth.
Add the chilled prosecco and stir well
Pour into the chilled flutes and garnish with sliced peaches.

Wow! This is my favorite drink besides the Mimosa. “The Bellini” is a delicious, refreshing drink, that is not weighted down with alcohol. I really do not drink, but one of these would be a lovely way to enjoy the day or evening…Besides the peaches are in season now, and how tasty…Thanks for reminding me about this drink. Lovely! Looks so refreshing……. I think the little flat peaches are so delightful, but they are really difficult to get hold of in the UK.
I used to find them at M&S but now you can find them in Sainsburys and Morrisons too. It seems like they have come down in price too in the last few years. Love them!
