Soo.. are you ready for the countdown?
I am really looking forward to celebrating the New Year in style this time. I have really splashed out this year: I bought a pair of red knickers (which means good luck for the new year) and a red dress too. I am just in the mood for partying..hard 🙂 and I know this coming year is going to be great!
You might want to take a look at this bruschette I made with frittata and arugola leaves, they are very tasty and healthy and they would be great as party food.
- Prep Time : 25 minutes
- Cook Time : 20 minutes
Wash the tomatoes and the spinach leaves and chop them finely.
Chop the onion finely, put it in a non-stick pan and stir fry for a couple of minutes with 2 tbsp of olive oil. Add the tomatoes (but leave some aside for the bruschetta) and spinach and cook for 8-10 minutes until soft. Stir from time to time.
In a bowl whip the eggs with a fork then add them to the pan with the grated Parmesan cheese, salt and pepper. Stir well and cook for 10 minutes.
Toast the bread, slice it into small squares or rectangles and drizzle it with plenty of olive oil, place a few rocket leaves on top and chopped tomatoes, drizzle with more olive oil and a few drops of balsamic vinegar then place a piece of frittata on top.
