Chicken and zucchini skewers..tender and moist!

Today I made this recipe up really quickly. I only had 30 minutes to make something up for dinner before having to dash off to take my children to their afternoon sports activities.

I usually like to prepare dinner early on in the afternoon so when my children are back we don't end up eating too late.

These chicken skewers made a fab dinner for all of us. Super simple: just mince some chicken breasts, add grated zucchini, egg, parmesan and breadcrumbs, lightly fry them in a pan and dinner is sorted. Serve with lots of green salad and with a natural yogurt dip.

Buy organic/free range or corn fed chicken if you can, as caged/mass reared chicken has very little taste.

Whiz the chicken breast in a processor. Grate the zucchini at julienne.

In a bowl mix the zucchini, chicken, egg, parmesan, breadcrumbs, salt and pepper and lemon zest.

Wet your hands with water.Β  This will help you when working the mixture. Soak the wooden skewers in water.

Divide the mixture into balls, roll them into long cylinders then pierce them into the wooden skewers.

Roll them into olive oil. Heat a griddle pan and cook the skewers over a medium heat for about 15 minutes turning them on all sides.

Serve them warm with a yogurt dip.

    dear Alida, these skewers look perfect and the fit very well into my diet. As we have had very cold and wet weather until a few days ago in the Abruzzo region, the zucchini plants are not producing yet. But soon the zucchini season will start and I will immediately try these delicious skewers! Thank you for the recipe!

      Dear Carla,
      I know the season has not been great in many parts of Italy especially in the North. Over here there is still lots of rain but hopefully summer is on its way soon.
      I am pleased you like the recipe, this is very easy to prepare.

    Love the idea of a caravaners cookbook! Not that I have a caravan….. but I am sure it will have a place in lots of small and under-equipped spaces! Great that you have a recipe in there.
