This recipe comes from an old friend of mine who passed it to me some time ago. I did not think much of it so never really tried it until yesterday when I did not have a clue what to cook for dinner.
When I tasted it I was really surprised by how well mushrooms combine with chicken and the sage gives it that extra kick making it a very tasty casserole chicken.
It is always the case: the less ingredients you add the more tasty the dish! I have used organic chicken as it is much better in flavour.
- Prep Time : 30 minutes
- Cook Time : 50 min-1 hour minutes
In a large pan fry the garlic until golden with 2 tbsp of olive oil.
Rub some salt and pepper on the chicken and add it to the pan. Seal it for 10 minutes until golden. Then add the sage, a drop of wine and the finely chopped mushrooms.
Cook for 5 minutes to let the wine evaporate.
Turn the heat down, put the top on and cook for about 45 minutes.
When cooked sprinkle with fresh parsley before serving.
Serve with fresh salad.
