Colourful gateau au gratin with vegetables

We are well into the autumn now, actually into an early winter this year which seems to have arrived early. What we want now is good, hearty, home cooked food to enjoy with the family. It is interesting how as the weather changes we fancy different type of foods.

Today I made this vegetables gateau which is a side dish to go with meat or fish or you can make it more of a main meal by adding mozzarella or any type of cheese or ham to add in between the layers of vegetables.

This is a happy dish with plenty of colours: choose all the different type of vegetables you like and possibly all of different colours to make this a feast to the eyes too.

  • Prep Time : 30 minutes
  • Cook Time : 1 hr minutes

Instructions

Mix the breadcrumbs with the Parmesan, oil and salt.

Slice all the vegetables lengthwise into slices half a centimeter thick.

Grease a baking tray with some olive oil and lay the vegetables on it making layers. On each layer sprinkle some of the breadcrumbs mixture, a few basil leaves and a dash of olive oil. Finish off with a layer of tomatoes and sprinkle some breadcrumbs mixture on them too.

Cover the gateau with tin foil and put something heavy on top for a few minutes to compress it well.

Cook for one hour at 200 C covered in foil. Take the foil off for the last 15 minutes to get a nice golden colour.
