Crunchy Baked Lemon Sole

This is a quick one. Get some fresh lemon sole fillets. If you buy the fish whole you can tell about its freshness much more easily, the skin should be shiny and the eyes should not look "tired" but clear and bright.

The taste of the fish will be completely different if it is not fresh.

The soles are coated in breadcrumbs and cooked in the oven with some olive oil sprinkled on them. Makes them very tasty and light.

  • Prep Time : 20 minutes
  • Cook Time : 20 minutes

Instructions

Sprinkle some salt on the fillets and roll them into flour.

Beat the egg with the milk and dip the soles in it then roll them into the breadcrumbs.

Lay them on a baking tray on baking paper and pour a little olive oil on the fish and sprinkle with the parsley.

Cook in a hot oven (200 C) for 20 minutes until they turn nice and golden.

You can squeeze some lemon juice on them if you like.
