Easy 15 minutes lasagna in a pan

Fancy making lasagna and having just one pan to wash? If you do then read on, you might find this one interesting.
Lasagna in a skillet is something that seems to be trending over the internet; when I saw it I thought: wow, yes this is must-try one!
This speedy lasagna makes a good mid-week fuss free meal. You can make the lasagna in the way you like: it can be the classic one with meat sauce, just with veggies and cheese or mushrooms or just a simple mozzarella, tomato and basil lasagna which can only take minutes to prepare.
All you do is assembling your lasagna on the pan making layers with tomato sauce (and basil leaves), mozzarella and grated cheese and then you cook it on the stove for about 20 minutes. It is ideal if don't have much time on your hands but you want something tasty to fill you up nicely.
You can serve this with a lovely fresh green salad.

Ingredients
- fresh lasagne sheets - 300 g - about 8 sheets
- tomato sauce - 500 ml - 17 fluid oz
- mozzarella - 300 g - just over 2 + 1/2 cups
- grated parmesan cheese - 35 g -1/3 cup
- fresh basil leaves - handful
- salt
- olive oil
Instructions
Roughly chop the basil leaves. Mix the tomato sauce with 2 tbsp of olive oil, a pinch of salt and the basil leaves.
Chop the mozzarella into small pieces.
Pour a scoop of tomato sauce, spreading it well, on the bottom of the pan and put one or two pasta sheets on top (this depends on how large your pan is). Put some more tomato sauce and spread it well on the pasta, some mozzarella and a good sprinkle of parmesan cheese.
Put some more pasta on top and continue making layers until the end of your ingredients. Finish off with some mozzarella and tomato with parmesan on top and a drizzle of olive oil.
Cook on the stove at a moderate to low heat. Cover with a lid and cook for about 20 minutes. Check your lasagna, as the moisture of the sauce evaporates you might need to add a little water in the side edges of the pan (gently lift the pasta with a spatula) and then continue cooking until the sheets of dough will be soft. Swirl the pan occasionally so that it will cook evenly. Prick the pasta with a knife to check if it is cooked. In the last 5 minutes remove the lid and let the water evaporate a little.

Yes because I used large lasagna sheets which were slighly bigger for my pan.

Looks Lovely – can I make this in the oven? If so, how long will it take and at what temperature?
Yes you can, you need to use an ovenproof pot like pyrex. Cook at 190C or 375F for the same time 20 or 25 minutes with the lid on. Remove the lid during the last 10 minutes of cooking. Prick the pasta with the fork to make sure it is cooked.
