Do you miss the summer sunshine and all that nice fresh foods you had on holiday?
Let me give you one of those classic, fresh Italian recipes you can never get bored with.
If you can get hold of fresh anchovies you can marinate them and enjoy them on a piece of toasted rustic bread. The flavour of the sea is guaranteed!
Marinated anchovies can last in the fridge for quite a while as the oil and vinegar are a natural preservative. If you are hosting a dinner party you can make these in advance and serve them as a starter. Your guests won't be disappointed!
- Prep Time : 25 + 5 hours to marinate minutes
Clean the anchovies by scaling them, removing the heads and the viscera. Rinse under running water
Fillet them by running the blade of a sharp knife over the spine of the fish. Lay the fillets on a large tray
Sprinkle the fillets with the vinegar, salt, lemon juice, 5 tbsp of olive oil, chopped parsley and chopped garlic. Let them marinate for about 4 to 5 hours
Serve them with buttered warm toasted bread.
