The bikini season is nearly here and I am always baking and cooking. I don't know how on earth I will fit in my summer clothes. After enduring a long and cold winter cooking and eating well has been a great comfort and of course a major source of pleasure.
Today my daughter told me: "Mummy I love you because you cook nice things for me". That will make it even harder to stay away from the kitchen!
This means that the easiest way is to cook lighter things, like this fat free cake I made today with no butter or oil added. The pineapple on top will make it moist and refreshing. This is a simple cake and it does not take too long to make.

Beat the egg yolks with half of the sugar
then whisk the whites with the remaining sugar
add the lemon zest
add the flour, the cornflour, the baking powder, the juice of the lemon, the milk and stir it in gently. You need to reach a smooth consistency. Add extra milk if needed
pour the mixture into a greased round baking tin
crush the amaretti and put them over the mixture
clean and cut the pineapple into slices and lay it over the mixture. Bake for 25-30 minutes
sprinkle some icing sugar over it.
