Fat Free Pineapple Sponge Cake

TheΒ  bikini season is nearly here and I am always baking and cooking. I don't know how on earth I will fit in my summer clothes. After enduring a long and cold winter cooking and eating wellΒ  has been a great comfort and of course a major source of pleasure.

Today my daughter told me: "Mummy I love you because you cook nice things for me". That will make it even harder to stay away from the kitchen!

This means that the easiest way is to cook lighter things, like this fat free cake I made today with no butter or oil added. The pineapple on top will make it moist and refreshing. This is a simple cake and it does not take too long to make.

  • Prep Time : 20 minutes
  • Cook Time : 30 minutes

Ingredients

Instructions

Beat the egg yolks with half of the sugar

whipping the yolks

then whisk the whites with the remaining sugar

whipping the egg whites

add the lemon zest

lemon zest

add the flour, the cornflour, the baking powder, the juice of the lemon, the milk and stir it in gently. You need to reach a smooth consistency. Add extra milk if needed

mixing up ingredients

pour the mixture into a greased round baking tin

into the mold

crush the amaretti and put them over the mixture

amaretti

clean and cut the pineapple into slices and lay it over the mixture. Bake for 25-30 minutes

Β sprinkle some icing sugar over it.

    What a beautiful sponge cake, Alida! I love the use of pineapple (I think pineapple is mis-spelled in the title of your post). Thanks so much for sharing this delicious dessert. FYI, the amaretti cookies would be considered a “finished” ingredient by the Made with Love Monday guidelines and so these should really include a link to a recipe for making the cookies. Store-bought cookies are generally prohibited by the series…

    It doesn’t look like a fat free… pineapple must have lent the moisture to the cake…your sponge cake looks very beautiful with flowered shaped pineapple topping.
