Most of the time when I eat a store bought cake I always end up with an itchy throat because of the large amount of sugar it contains; then it will sit on my stomach for longer than it should as it is often too heavy with lots of fat added to it as well.
Much better to make your own and it really does not take long to make a delicious cake.
This one takes just 20 minutes and it is not too naughty with Greek yogurt, olive oil and oranges. These are the sort of cakes I like: fuss free, healthy and quick.
Swapping olive oil for butter makes such a difference: cakes made with olive oil are much lighter and healthier. I love olive oil and sometimes I use it on my skin too. At least it is natural and without all those preservatives you often find in creams.
As always this cake didn't last longer than two hours, my family members are like vultures! "More mamma more! "

In a bowl mix the eggs with the oil and the yogurt. Add the sifted flour, the granulated sugar and the zest of the oranges. Mix well then add enough milk to make a smooth creamy consistency.
Peel and slice the oranges.
Pour the mixture onto a round baking tin measuring approx 22 cm or 9 inch and place the orange slices on top then sprinkle with brown sugar.
Cook at 180C or 350F for about 45 minutes or until golden. Check with a toothpick if your cake is ready. If it still feels very moist leave it in the oven for a little longer.
