Pizza, pizza, pizza.. I could never get bored of it. I make it almost every week as it is in high demand in my household.
The children like margherita with artichokes and a favourite one is also pizza with fresh arugola and Parmesan shavings (oh yes, Parmesan even on pizza!).
A touch of balsamic vinegar will give a final delicate touch to this healthy and colourful pizza which I find more tasty than pizza with salame or other heavier toppings.

Make the pizza dough following the recipe here.
After you have let the pizza base rest for the second time, spread some passata or tomato sauce over it. Make sure the tomato sauce is not too runny. You will find that a thicker sauce will make a less watery pizza and a crunchier base.
Put cubes of mozzarella over the pizza and a sprinkle of dried oregano
Cook the pizza for about 25 minutes until golden. If you lift it with a fork, the base underneath should be crunchy. Then you will know your pizza is cooked
Sprinkle generously arugola leaves over it
Now some Parmesan shavings
Drizzle with olive oil and balsamic vinegar
And your pizza is ready!
