- 4 chicken legs
- 2 sticks of rosemary
- the zest of one lemon
- 5-6 dried apricots
- 1 onion
- a drop of white wine
- 2 cloves of garlic
- 1 tbsp honey
- olive oil
- salt and pepper
We have been having very cold weather here in the UK with snow and ice, just the sort of weather that makes you want to stay in and cook + eating a lot!
I cooked this by chance and it turned out to be a very nice dish indeed.
A touch of lemon zest to your chicken will make a big difference in flavour whilst honey and a few apricots will add a little sweetness making it all very pleasant indeed.
Directions:
Chop the onion and stir fry it in a pan with the garlic and a couple of spoons of olive oil.
Rub the chicken legs with salt and pepper
Add the chicken to the pan and seal it on a high heat until golden. Then add the white wine
Grate the lemon zest on the chicken
Add the rosemary, honey and apricots
Put the top of the pan on and cook on a low heat for about 45 minutes. If it gets dry add a little hot water from time to time.

This chicken looks flavourful and succulent. Have never tried to cook chicken with apricot, love that idea. I have dried apricots sitting around so I can use that for this dish.
