• 150 arborio rice
  • 200 g fresh spinach leafs
  • salt and pepper
  • 1 organic vegetable stock cube
  • 1,8 Liter of water
  • 1 onion
  • grated Parmesan cheese
  • olive oil

 

January is a good time to have soups: it is cold and we all need something on a light side after the Christmas binges.

Get some tender spinach leafs, rice and an onion and you will make a delicious and light soup in no time.

This is a very Italian one and I like it because it is mild in taste and I can always make it at the last minute.

 

 

Directions:

Wash and clean the spinach leafs (small ones will be more tender). Then chop the onion finely

Put the spinach, the onion, the stock cube, salt and cold water in a large pan. Cover up and bring to the boil

Boil for 10 minutes then add the rice. Cook for about 10 minutes until the rice has cooked; keep stirring from time to time

Switch the heat off and add a large tbsp of olive oil, pepper and 2 tbsp of grated Parmesan

Stir well and serve
