Mediterranean style oven baked salmon – easy recipe

Fish, fish and more fish. I could easily live without meat but not without fish. I love any type of fish and my children have grown to love it too. Since they were babies fish was on the menu at least twice a week, all sort of fish: from mackerel, to sardines, to sea bream, clams.. anything I could find fresh at the fishmonger.

This time I used some Norwegian salmon fillets which I find quite delicate in taste. You can prepare this in advance and just pop it in the oven at dinner time. Cooked with tomatoes, olives and capers and olive oil this dish has the taste of the Mediterranean and it only takes 12 to 15 minutes in the oven.

It is light, it is healthy and it is delicious. I find fish easier to prepare and cook than meat. Last summer we had several barbecues and mostly it was fish as it is quicker to cook.

If you go to work and come back tired and late in the evening then this is a speedy and tasty recipe indeed.

This recipe serves 4.

Wash the tomatoes and the dill. Peel and slice the garlic clove. Chop the tomatoes in half and finely chop the chives too.

Put the dill, the tomatoes, the garlic in a bowl and mix them well with a pinch of salt and a good drizzle of olive oil.

Pour some olive oil on a baking tray, add the tomatoes, lay the salmon on top and then with a spoon put some tomatoes on top of the salmon too.Β  Scatter the olives and the capers on the fish and sprinkle with salt and pepper.

Sprinkle with olive oil and bake for 12 to 15 minutes at 180C or 350F. Serve the salmon with the baked vegetables and with a good slice of rustic bread, rice, potatoes or couscous.

    This is one of my favourite ways of cooking fish, simple and fresh. I also grew up eating a wide variety of fish and seafood and today this still makes up most of my weekly protein intake when compared to meat. Well, well Alida, your talent continues to flourish.     Beautifully simple and full sunshine flavours Alida….. We try to eat lots of fish here too….. We are fortunate to live in a town with a working harbour and a lovely fish market attached.     Me again! Made this dish tonight. So easy and quick to prepare and it looked so colourful. Phil loved it. I served it with lightly steamed fennel finished off in a hot griddle pan with a splash of olive oil and a sprinkling of Parmesan. Delicious! Much love to you all. Xxx
