Melon, mozzarella and prosciutto salad

When it is hot who wants to spend ages in the kitchen?
For as much as you can love cooking at this time of year it can be hard to stand by the cooker for too long. Cold meals are the answer.
Increasing the consumption of fruit and vegetables can help with the heat. In other words your summer diet should be quite different to what you eat in the winter.
Today I made this melon, mozzarella, tomato and parma ham salad which I had for lunch with toasted bread. It was light and nutritious.
Use a melon baller to make little balls with the melon but if you don't have one you can just cut the melon into cubes.

Ingredients
- melon - 1
- tomato - 1
- mozzarella - 2 balls (250 g - 9 oz)
- basil leaves - a few
- parma ham - 4 slices
- olive oil - 4 tbsp
- vinegar - 1 tbsp
- salt and pepper
Instructions
Slice the melon in half, with the help of a spoon remove the seeds and with a melon baller make small balls.
Drain the mozzarella and cut it into chunks. Slice the tomato. Wash the basil. Put the melon, tomato with the mozzarella in a bowl. Dress with olive oil, a pinch of salt and pepper and the vinegar and mix well.
Cut the ham into strips, add it to the salad, decorate with basil leaves and serve.

I agree with you, it has been too hot to cook…so a wonderful salad dish is perfect! I love your presentation of this dish and the ingredients are awesome together. The colors are so lovely. That makes the dish more appetizing. I love melon mixed in with these ingredients especially with the parma ham and the cheese. Plus like you said, it is light and nutritious. Im agree In summer is difficult.
Usually I bake at night or early in the morning cause Im crazy by baking:)
