I love having barbecues! This is what summer is for. We had one in the garden with the family recently.
We started off with a fresh tomato, basil and anchovy bruschetta.
This is always a great starter and very quick to prepare. Just chop some tomatoes and mix them with some torn fresh basil leaves. Toast some rustic bread slices, rub a clove of garlic on them, put the tomatoes on top and a fresh anchovy fillet. Drizzle with plenty of good quality extra virgin olive oil. Just so delicious.
I bought sardines. In Italy many people love fresh fish and there is always a queue at my local fishmonger.
Before popping sardines on the barbecue I marinate them for an hour with white wine, parsley, garlic cloves and olive oil.
Barbecuing them brings out their flavour so well. They are crispy and full of flavour and so addictive!
We also cooked octopus, one of my favourite types of fish.
And some pork steaks and Italian sausages too.
Our dessert was very simple. We popped some peaches on the barbecue and served them with vanilla yogurt. A very light and healthy summery dessert.
The day past and we stayed in the garden until the evening chatting for hours whilst the children were happily running around.
I could not have wished for a better day!
