Pasta bake is a classic Italian dish well known abroad too. It is ever so simple to prepare, you can make it in advance and it tastes delicious...always!
Cook your pasta al dente, add tomato sauce, cheese and herbs.. I have added olives too. Personalize this dish to your liking and you will find that you will make it over and over again... and that's a promise!

Chop the onion finely and stir fry it in a pan with 2 tbsp of olive oil until translucent. Add the tomato sauce, olives, oregano, basil leaves, salt and pepper. Cook for 10 minutes at a gentle heat with the lid on.
Cook the pasta al dente then drain.
Grease a baking tray with oil, put the cooked pasta in, add the sauce, the chopped mozzarella, 2 tbsp of olive oil and 4 tbsp of grated Parmesan or Pecorino cheese. Mix well.
Sprinkle with 2 tbsp of Parmesan or Pecorino and bake at 200C or 400F for 15 minutes until the topping looks crisp and golden.
