I have been making this for my daughter's school pack lunches. Just a simple summery pasta dish, which is easy to take with you to work, to a pic-nic or just to be enjoyed at home.
I have taken this to the beach today and my children liked it very much.
It is hot in Italy and I am enjoying the much needed sun. The sunshine gives you energy, happiness and just makes you generally feeling good.
This is handy when you want to prepare something in advance if you need to go away and want something ready when you get home.
Just cook some good quality pasta and then add whatever you fancy in it. Easy stuff.
- Prep Time : 50 minutes
- Cook Time : 45 minutes
Cook the pasta in salty water, then drain and put it in a bowl.
Hard boil the eggs, drain and then peel the shells off and chop them into pieces.
Cut the cherry tomatoes into halves.
Cook the peas in a pan for 15 minutes with a tbsp of olive oil.
Add the eggs, the peas, the ham, the diced cheese and mozzarella, olives, capers, chopped artichoke hearts, the tomatoes, tuna and 4 tbsp of olive oil and stir it all in with the pasta. Enjoy!
