Pasta with Eggplant and Olive Sauce

Eggplant are a beautiful vegetable. You can make really tasty dishes with them. They remind me of the summers in Italy.

My mum always had them in the garden and she would make tasty dishes including this yummy pasta. I used to look forward for her to cook it and my children seem to be so in love with this dish now that I end up making it almost every week.

  • Prep Time : 25 minutes
  • Cook Time : 40 minutes

Chop the eggplant lengthwise into sticks. Sprinkle some salt over them and let them rest for 10 minutes.
With a kitchen towel dry the water that the eggplant releases (the salt makes the eggplant sweat).
Chop the onion finely and gently fry it with the garlic in a large pan with 4 tbsp of olive oil until translucent.
Add the eggplant and fry them with the onions and garlic for 10 minutes until they turn brownish in colour.

Now add the tomato sauce, the sugar, vinegar, oregano, chopped basil, salt and pepper and the olives. Stir well and cook for 10 minutes with the top off then put the top on and cook for a further 10 minutes.

In the end add two tbsp of olive oil and stir it through.
Cook the pasta al dente and put it in the pan with the sauce. Stir it well for a minute over a source of heat and serve with lots of freshly grated Parmesan.
