Peaches with basil sauce and balsamic vinegar, fresh and summery

Peaches and more peaches.. I keep buying them and they keep disappearing from my pantry.

My children loved them and they have 3 or 4 at a time. We have them for breakfast with yogurt and honey and we love them roasted too .

My last recipe is very simple. Simply slice your peaches and flavour them with a basil and orange juice sauce and add a touch of balsamic vinegar. Ideally they should rest in the fridge for a couple of hours to allow the flavours to get absorbed.

If you like you can serve them with vanilla ice cream. This recipe serves 2.

  • Prep Time : 10 minutes

Instructions

Wash and slice the peaches into segments then arrange them on a plate or in a bowl.

In a processor whiz the sugar with 4 or 5 basil leaves and the orange juice.

Pour the basil sauce on the peaches mix well and put them in the fridge for a couple of hours to marinate. When it is time to serve them drizzle them with a little balsamic vinegar and garnish with basil leaves.

    Peaches are among the many fruits that I adore eating, especially in the summer. I love your dish, Looks so appetizing and lovely presentation. I don’t blame you for eating peaches..they are so sweet and really this is the best time to get the best of the crop. Balsamic vinegar with the peaches has an awesome flavor. Nothing better than that on a hot day in the summer…but you need to have a glass of wine with it to just top it off and ice cream for sure. Thanks for sharing, have a good weekend…Ciao!
