- 500 g penne
- 1 onion
- a handful of black olives
- 100 ml tomato sauce
- 1 can of tuna (130 g)
- anchovy paste
- salt and pepper
- olive oil
- a few leaves of basil
“So what on earth am I gonna cook tonight?!” You hear this so many times.
We all run out of ideas sooner or later and mostly if you go to work all day you certainly don’t want to be slaving on the stove for hours on end. And this is fair enough, but you still have to eat and you certainly don’t want to reach for that ready meal. After a long day you deserve better than that, don’t you?
What you want is to just learn basic easy meals that are healthy and satisfying at the same time. There are many dishes that will take you no more than 20- 30 minutes to prepare.
I can speak for myself as I love cooking but I always look for relatively speedy meals during the week. Spending a couple of hours on the stove to prepare a weekly meal is unrealistic and ever so boring!
I am sure many of you would have made pasta with tuna and tomato sauce before. It is a classic dish and an easy sauce to make at home.
To make it a little more interesting just throw in a handful of black olives and a few basil leaves. Also if you squeeze half the size of your thumb, of anchovy paste the flavours will balance themselves better and it will take away that “something is missing” taste you often get with tuna pasta. Basically it seems to just “click” in the flavours much better.
Chop the onion and stir fry it in a pan with a couple of tbsp of olive oil until translucent
Drain the excess oil/water from the can of tuna and add it to the onions
Stir the tuna in with the onions for a couple of minutes
Add the tomato sauce, the basil leaves, olives, salt and pepper and a little squeeze of anchovy paste. Cook for 10 minutes with the top off
Cook the pasta in salty boiling water for a couple of minutes less than it says on the packet then add it to the pan with the sauce, a couple of tbsp of olive oil and cook on a high heat for the remaining 2 minutes whilst stirring all the time.
