Hello! I am back after a little break! I had not Internet available for a while and it was my sister's wedding and lots to do so I thought it was a good time for me to take a little holiday.
I enjoyed every single minute of the wedding. It was the classic Italian-style wedding with lots of food, drink and laugh! And I made the most of it, certainly.
Next week I am back to the UK as the school starts again. This means I will have my computer back and more time to blog.
On the other hand I always find it hard to leave my relatives. We are quite close and as you get older family matters more and more. The good thing is that I go back to Italy quite frequently.
In the meantime I have prepared this simple courgettes and prawns spaghetti very quick and easy. I did make a risotto like this before and spaghetti are just as nice. Prawns (or shrimps) go very well with courgettes. It is actually a very classic combination, light and summery. Courgettes are in season now and they taste at their best.
- Prep Time : 25 minutes
- Cook Time : 20 minutes
Chop the onion finely and stir fry it until translucent with a couple of spoons of olive oil.
Chop the zucchini and add them to the onion. Cook them on a gentle heat until they are soft. Add salt and pepper.
Now add the cleaned and shelled prawns, the white wine, parsley, 3 tbsp of olive oil and cook for about 3 minutes.
Cook the spaghetti in salty water for 2 minutes less than it says on the packet. Drain in a colander and add them to the sauce. Stir them in on a source of heat for the remaining 2 minutes.
Serve with plenty of grated Parmesan.
