Quick Muffin Pizza for a tasty snack

The weather is so beautiful out there and I have been going around the shops looking for clothes. Of course I only came back with lots of food instead. Food shops are like a magnet to me and that's always where I end up going.
I bought lots of nice things: chia seeds, flaxseeds, quinoa flakes, millet and buckwheat. I have a secret addiction for these foods, I simply love their wholesome taste and I have them with yogurt in the morning. What's your favourite breakfast?
Today I am leaving you with these easy pizza muffins which are great as party food or just as snacks. They do not need resting time and they are soft and delicious!
- Prep Time : 30 minutes
- Cook Time : 20 minutes
- Yield : 12
Ingredients
- flour - 400 g - 4 cups
- water - 100 ml - 3.5 fl oz
- olive oil
- baking powder - 1 tbsp
- salt - 1 tsp
- tomato sauce - 200 ml
- hard cheese - 200 g - 7 oz
- oregano
Instructions
In a bowl mix the flour with the water, the baking powder, 3 tbsp of olive oil and the salt. Mix well. Working with your hands make a smooth ball.
Cut the pastry into 12 balls and with your rolling pin flatten them and make 12 circles (about 10 cm/4 inch diameter).
In a bowl mix the tomato sauce with 2 tsp of oregano, 2 tbsp of olive oil and a pinch of salt. Put 1 tbsp of tomato sauce on each circle and some cheese cubes, then seal like a parcel.
Place them on muffin cases (I recommend oiling the cases a little) and put a tsp of tomato sauce, dried oregano and a drizzle of olive oil on top.
Line your muffins up on a baking tray and cook at 180C / 350F for 20 minutes or until golden.
Beautiful, soft and delicious pizza muffins!

What a wonderful idea and so cute. These muffin pizzas are perfect for a snack and a great finger food. Also love the fact that they are easy and are very quick to make. Love that, sometimes we need something that is very fast to create. Great job, and like you if I was to go shopping for cloths, I would also end up with food items, especially veggies.
