Roasted peaches with amaretti crumble

Simple things are often the best and this is true for most aspects of life.
Now that there is an abundance of ripe and sweet summer peaches it is the best time to use them in baking and to make fantastic desserts.
Peaches baked in the oven are a simple and traditional Italian recipe. These have been topped with crushed amaretti cookies, cocoa powder and flaked almonds. A last minute dessert to make in 15 minutes and ever so delicious!
You can serve it with vanilla ice cream if you like.
- Prep Time : 15 minutes
- Cook Time : 30 minutes
Ingredients
- peaches - 4
- egg yolks - 2
- unsweetened cocoa powder - 1 tbsp
- amaretti biscuits - 60 g - 2 oz
- brown sugar - 2 tbsp
- flaked almonds - to sprinkle
- confectionery (icing) sugar - to sprinkle
Instructions
Wash and slice the peaches. Cut them in half and remove the stone.
In a bowl mix the egg yolks, the brown sugar, the crushed amaretti and the cocoa.
Fill the peaches with the amaretti mixture, sprinkle them with almond's flakes and line them up on a baking sheet. Pour a glass of water on the baking sheet to prevent the peaches from drying out. Bake for 30 minutes at 180C or 350F.
Serve warm with a sprinkle of confectionery sugar.
