- 1 Kg apples
- 250 g self raising flour
- 3 tbsp coconut flakes
- 80 g butter
- 180 g sugar
- 3 eggs
- the zest of one lemon
- a pinch of salt
- 100 ml milk
- for the topping:
- a handful of almonds
- icing sugar
- 15 g cinnamon
I love rustic cakes. They bring back memories of times spent with granny, old table cloths and nice cooking smells.
They don’t require lots of decorating or fuss to be made and they are straightforward. They are just simple cakes, packed with goodness to enjoy with tea of coffee.
For this cake you will need a good Kilo of apples. I find that grating the apples gives a nice texture to the cake and a touch of cinnamon on top helps adding extra flavour.
Method:
Peel and grate the apples in a bowl. Cover the bowl up with cling film and put aside.
In a bowl put the flour, salt, lemon zest, eggs, half of the sugar, the coconut and the milk. Stir all the ingredients well together
Melt the butter and add it to the mixture. You will need to make a pastry that’s moist but not too runny. Add some more milk if needed
Put the mixture on a greased round baking tin
On the top put a layer of grated apples and sprinkle with sugar
Make another layer and sprinkle with the remaining sugar
Decorate with the almonds and cook in the lower rack of the oven at 180C for 50 minutes
When the cake has cooled down sprinkle with some icing sugar and with the cinnamon.
