Soft and crumbly lemon biscuits

Soft and crumbly lemon biscuits

By 20/11/2013

Yesterday I made good use of some organic lemons I had in the fridge. Organic lemons are more expensive but you can often tell the difference by their strong "lemony" flavour and smell. I buy them exclusively for baking as when you need to use their zest, as well as their juice, washing them won't get rid of the pesticides.Β  If you find them too expensive buy unwaxed lemons instead.

I made these addictive biscuits which are soft and crumbly and with a very aromatic lemony taste. So simple yet so tasty!

  • Cook Time : 15 minutes

Ingredients

Instructions

Work the butter with the sugar to a creamy consistency. Wash the lemon, grate the zest, squeeze the juice and add it to the mixture. Add the egg, the flour and the cornflour and stir well.

With your hands shape the dough into a roll and let it rest for an hour

Roll them into the caster sugar and then into icing sugar

Line them up on a baking tray (over a sheet of baking paper) and cook for 180C or 350F for 12 to 15 minutes until slightly golden. They should form cracks on top.

I don’t buy organic lemons too often mostly because they will spoil so quickly (and I often forget to use them in time!)… But you’re so right – the flavor is better and there are no nasty pesticides to worry about with organic… These cookies look delicious, Alida!

Yes I agree, they do go off quicker than ordinary lemons! I only buy them when I know I am going to use them soon. Thank you for hosting Mark!

I got a small bag (4 pcs) of organic lemon yesterday and exactly like you, just for the baking and making dressings!
    These look melt-in-mouth!

Oh another lovely idea for this party – I love lemon biscuits and I don’t think I’m the only one. They look very Italian the way you have made them, so that would go down well too.

I can’t believe the price of lemons these days but as you say Alida, it is so much better to buy organic when it comes to lemons.

Your lemon biscuits sound so good. I would love to have a little pile to go with my afternoon tea:)

Thank you so much for sharing, Alida…
