Yesterday I made good use of some organic lemons I had in the fridge. Organic lemons are more expensive but you can often tell the difference by their strong "lemony" flavour and smell. I buy them exclusively for baking as when you need to use their zest, as well as their juice, washing them won't get rid of the pesticides. If you find them too expensive buy unwaxed lemons instead.
I made these addictive biscuits which are soft and crumbly and with a very aromatic lemony taste. So simple yet so tasty!
- Prep Time : 30 minutes
- Cook Time : 15 minutes
Work the butter with the sugar to a creamy consistency. Wash the lemon, grate the zest, squeeze the juice and add it to the mixture. Add the egg, the flour and the cornflour and stir well.
With your hands shape the dough into a roll and let it rest for an hour
Make small balls the size of the walnut
Roll them into the caster sugar and then into icing sugar
Line them up on a baking tray (over a sheet of baking paper) and cook for 180C for 12 to 15 minutes until slightly golden. They should form cracks on top.
Et voila'! Enjoy with a good cup of tea or coffee 🙂
