Simple apple cake, soft and moist

Simple apple cake, soft and moist

By 10/11/2014

This is the time of year when the woods have that strong earthy and mushroom smell. Burnt wood, misty days and that strange silence..everything around us, everything we see and breath now feels like late autumn and with that comes the need and desire to feel pampered and loved even more!
And what else could pamper and comfort you more than a simple granny-style apple cake? Very very simple indeed but moist and delicious.

These are my favourite types ofΒ  recipes to make quickly when I have those 20 minutes to spare; So it does not feel like you need to spend ages making something nice whenever you feel like a having a treat.

This cake is packed with apples. I have used 4 apples so make sure you use 5 or 6 if your apples are small.

  • Prep Time : 20 minutes
  • Cook Time : 40 minutes

Ingredients

Instructions

Peel the apples, remove the core and slice them as thin as you can (you can use a mandolin if you have one).

sliced apples

Make the batter by whipping the eggs with the sugar, then add the vanilla extract, the cinnamon, the melted butter and the sifted flour. Mix well then add the milk.

batter

It will be a watery mixture but that is OK. Add the sliced apples, mix well and pour it on to a greased baking tray. I use a silicone one so I don't need to grease it.

Cook at 180C or 350F for 40 minutes. Check with a toothpick if the cake is cooked. Leave it in the oven for a little longer if needed. Sprinkle with icing sugar.

What size pan did you use?

    • Alida

      Hi Theresa,
I have used a round baking tin measuring 22cm or 9 inches.

I just made it – it was delicious! However, the apples at the top burnt really quickly. Is there a way to prevent that?

    • Alida

You could cover the top of the cake with some tinfoil when you see that it starts to burn.
