Spaghetti with Tuna stuffed cherry tomatoes and courgettes

Summer is going so quickly! I want to make the most of all the vegetables I can get hold of! It is so much easier to be creative in the kitchen at this time of year.
Today I must share this recipe of spaghetti with stuffed tomatoes. I stuffed them well with tuna and parsley and had them with courgette strips. Very tasty indeed! A recipe that tastes of summer.
You can replace the courgettes with aubergines if you prefer or any other vegetables of your choice.

- Cook Time : 15 minutes
Ingredients
- spaghetti - 400 g
- cherry tomatoes - 25
- tuna in olive oil - 1 can (160 g)
- capers - 25
- parsley - a small bunch
- olive oil
- salt and pepper
- courgettes - 2
Instructions
Wash the tomatoes, cut off the top and empty seeds and pulp. Sprinkle the inside with salt and place upside down on your chopping board
Drain the tuna of its oil and mix it well with the chopped parsley
Stuff the tomatoes with the tuna pressing in well. Put a caper in the centre of each tomato
Wash the courgettes and slice them thinly with a knife.
In a pan stir fry the courgettes with 3 tbsp of olive oil. They should be soft and golden. Then add the stuffed tomatoes and stir fry them for 3-5 minutes.
Cook the pasta in salty water then add it to the courgettes and stuffed tomatoes with 2 tbsp of olive oil. Stir well and serve immediately.

What an ingenious idea! Love the little tomatoes filled with tuna and parsley. I love capers and to top off the tomato is a nice thought. Then with the slices of courgettes mixed with the pasta…must taste really good! It is a great combination of flavors and it makes a lovely presentation. Very colorful as well. It reminds me of the Italian flag. Red, White and the Green. Besides this dish is so easy and quick to make…a wonderful meal that is easy and nutritious as well. Great job!
