- 16 cherry tomatoes
- 5 basil leaves
- a pinch of oregano
- salt and pepper
- 2 tbsp breadcrumbs
- 2 tbsp grated Parmesan
- 2 tbsp olive oil
It’s Friday! What will you be doing this weekend? Cooking new things + eating is always a great way to relax
I made these stuffed cherry tomatoes last night. They are cute and they can be served in parties as finger food but they also make a nice change to the usual vegetables.
You can prepare them in a very short time and they only take 15-20 minutes in the oven, enough to get golden in colour and for the topping to crisp up. Use a good quality olive oil as it will make a difference.
My children loved them.
Directions:
Cut the cherry tomatoes in halves
Empty the tomatoes making sure you get rid of their seeds which contain lots of water
Put them facing down on a kitchen paper so that the excess water will be absorbed
In a bowl mix the breadcrumbs, the chopped basil leaves, oregano, Parmesan, salt and pepper and olive oil
Fill the tomatoes with the mixture
Line them on a sheet of baking paper on a tray and cook for 15-20 minutes until the top gets golden in colour
