Summertime panino for lunch

With temperatures above 95F all over Italy all I want to do is soaking in the sea and do absolutely nothing!

The children are having a good time at the beach: they never seem tired of making sand castles, looking for sea shells and splashing in the sea with their rubber rings, whereas I just lay on my towel with my large sun hat on flicking through magazines..cookery ones too of course, I need inspiration!

The beaches are packed as many people are on holiday in August. In Italy everything stops around Ferragosto (the 15th of August) the peak of the summer holidays and you can barely find room to lay your towel on the beach.

When it is too hot to cook, a good old panino can save us, at least at lunch time. This panino is inspired by summer with grilled eggplant, beef tomatoes and mozzarella, so refreshing and nutritious at the same time.

  • Prep Time : 15 minutes

Instructions

Wash and slice the eggplant. Heat a griddle pan over a source of heat and cook the slices on both sides for a couple of minutes each side. Drizzle them with olive oil.

Wash and slice the tomato and wash the basil.

Slice the bread roll in half and toast it a little on the griddle pan.
Make your panino and fill it with a slice of eggplant, a slice of tomato, two slices of ham and finally two basil leaves.

I love it with a glass of chilled and refreshing beer.

    Dear Alida,
    I love to hear about your travels at the beach. So glad that your children are having such a time building sandcastles. It must be lovely there. This panino is perfect for a delicious lunch. I love eggplant with all of the ingredients. Looks so inviting, I wish I was there visiting..Would love this for lunch or anytime. Enjoy your holiday!
    BTW I just wanted to tell you that my brother came back from London and he brought me two thimbles. (I collect them) One was from the famous Harrod’s and the other is a commemoration for Baby Charlotte’s birth. So pretty. He was showing us some photos of where he stayed at the Marriott, West India Quay. He ate at the Cat and the Canary, Canary Wharf. He showed us photos of the sightseeing bus that his clients took him on. I saw the Buckingham Palace, the gate and also the guards. I can’t believe how clean the streets were and what beautiful flowers all over…I saw his photo of the Eye and also of the Tower of London. He really enjoyed his time there and he said that everyone was so friendly and hospitable. He is going to go back in January for another conference. Just thought you would like to know what Americans thought of London..Have a wonderful rest and enjoy the time with your children…

    Beautiful Alida….This sandwich brings back great memories of my first time in Italy. The family I was staying with would make a sandwich similar to this and bring them to the beach every day….awwww the memories! I will be trying this right away! Have a good week……
