- 4 slices of rustic bread
- 4 ripe tomatoes
- 2 garlic cloves
- basil leafs
- olive oil
- 1 tsp of vinegar
- salt and pepper
There are a few pleasures in life. One of them is the crunchiness of a freshly made tomato bruschetta dripping with gorgeous olive oil.
You don’t need to be hungry to have this yummy and healthy snack.
Get some good quality white rustic bread, some ripe tomatoes, fresh basil leafs and garlic and you have a recipe made in heaven. Yet it is so simple and can be made at the last minute.
Whenever I have guests for dinner this is always a winner.
Directions:
Wash the tomatoes, remove the cores and gently squeeze out the seeds and discard them. Tear the basil leafs.
Put the tomatoes, the basil, salt and pepper, a good glug of olive oil, garlic (use only one clove if you find it too overpowering), vinegar and stir it all well in.
Slice the bread and grill it in the griddle pan or in the oven on both sides for a few minutes
Put the mixture on the warm bread and enjoy!
