Tomato Risotto with Basil

Here I am, back to the UK ready for another year.
I can still feel the sun on my skin and I certainly feel less cold than I did before my holiday.
They say that the sun "warms your bones up" and can make you feel stronger and less cold during the winter months.
For me this is certainly true. I can cope well with the heat but I feel the cold very quickly, so having had over a month in the sunshine has made a big difference to my mood too!
I have not done much on my blog in the last couple of weeks and I am back now ready to start experimenting with new recipes. So I have given my kitchen a good spring clean today!
Whilst in Italy I made this risotto using my mum's tomatoes, fresh basil, onions and olive oil. Only a few ingredients for a maximum taste.
Choose ripe beef tomatoes and you can guarantee to get a beautiful risotto with all the taste of the Mediterranean.
- Prep Time : 25 minutes
- Cook Time : 50 minutes
Ingredients
- large and ripe tomatoes - 5
- fresh basil - 5-6 leaves
- salt and pepper
- olive oil
- medium onion - 1
- vegetable stock - 1
- rice for risotto - 300 g
- hot water - about 500 ml
- grated Parmesan

This sounds delicious, Alida, and I've never used tomatoes with risotto before. But I'm sure it tastes wonderful and I can't think of a reason why I wouldn't use tomatoes this way… Thank you so much for sharing!
