Valentine strawberry and cream crepes

I have been indulging on lots of lovely treats recently. Valentine came early in our family. Every year is the same, comes February and the "dieting time" is officially over.. not that I have been dieting much though anyway!
Here is one of the last desserts I dived into: these crepes with strawberries and cream are simply divine for Valentine. Drizzle them with some melted dark chocolate and hold your breath as you are going to sink your teeth into something so divine you will never ever forget. Hubby and I had one each all washed down with some Moscato Rose' wine (a sweet Italian dessert wine). Not bad hey?
I felt I could not wait for Valentine and I opened the box of "Baci Perugina", those Italian dark chocolates with hazelnuts which have a love message inside.. So classic for Valentine. I like dark chocolate and recently I started buying even darker one. I love the one with 90% cocoa content which is so bitter yet so addictive. It leaves you a "clean palate" and not with that itching in your throat you sometimes get when you eat chocolate with low cocoa and high sugar content.

If you make this dessert you can use other types of berries like raspberries, blueberries or blackberries instead of strawberries if you prefer.

- Cook Time : 10 minutes

Ingredients
- egg - 1
- flour - 65 g - 5/8 cup
- milk - 100 ml - 3 ½ fluid oz
- sugar - 1 tbsp
- salt - pinch
- fresh strawberries - 400 g - 2 cups
- powdered sugar - 2 tbsp
- fresh whipping (double) cream - 200 ml - 7 fluid oz
- dark chocolate - 4 or 5 squares
Instructions
Combine the egg, flour, sugar and salt and make a smooth mixture. You can use a blender if you wish. Let the batter rest for at least 20 minutes in the fridge.
Lightly coat a pan with butter and heat it up over a medium heat. Add 2 or 3 tbsp of batter and swirl to completely cover the bottom of the pan. Cook the pancakes for about one minute each side and shake the pan from time to time to prevent the dough from sticking to the bottom. Cook them until they look slightly golden then transfer them on to a plate by sliding them from the pan.
Make all the crepes (they should be at least four) then put them on a plate and set aside.
Wash the strawberries and using a mixer reduce them into a puree with the powdered sugar. Leave 3 or 4 aside for the final decoration. Whip the cream, add a 2 or 3 tbsp of the strawberry sauce and fold it gently.
Decorate with some sliced strawberries on top. Pour the remaining strawberry sauce over the crepes. Melt the chocolate over a pan of boiling water and drizzle it over the crepes. What an indulgence!!
I served this with a moscato rose' which was fantastic and of course my beloved Italian chocolate "Baci".

What a great way to start off Valentine’s Day, or any day really. We had crepes the other day for pancake day, but I think we are going to have them again on Sunday. With strawberries of course 🙂

Buon San Valentino to you dear friend. These crepes with the cream and my favorite berry (strawberry) are not only beautiful to look st but, they look delizioso! Love crepes as they are so light and easy to make. The drizzle of chocolate on top is sheer heaven..I am sure any Valentine would be loving this one for sure.
