What do you eat when you are at work? Most people take a sandwich but every single day it can be so boring.
So maybe I can inspire you today to try my latest recipe: a stuffed frittata roll which makes it ideal to take away. Hubby and I shared it over a couple of days and we really enjoyed it.
This is really straightforward recipe and it is ideal for pack lunches: this roll is packed with everything you need: eggs, vegetables, cheese and ham. It is basically a simple frittata made with eggs, zucchini, carrots and a little grated cheese, baked in the oven and rolled up with a nice filling of cream cheese and ham. Yes it is quite filling but not too heavy either. Have it with some bread, just with salad or simply on its own.

Turn the oven on at 180c or 350F.
Wash the zucchini and the carrots, cut the ends off and finely grate them.
In a bowl whisk the eggs and mix them with the vegetables. Add the cheese, salt and pepper.
Line a standard baking tray (one that fits your oven) with a sheet of non-stick parchment paper and pour the egg and vegetable mixture on it levelling well with the back of a spoon.
Bake for about 25 minutes or until slightly golden.
Remove from the oven, let it cool down for a couple of minutes then roll the frittata inwards whilst it is still warm and let it cool down.
Unwrap and spread the cheese and place the ham on it. Roll it up as tightly as you can, wrap it in cling film and put it in the fridge to set for a couple of hours.
You can leave it in overnight too this will make it easier to slice.
