Quick recipes are always my favourites and today I give you this one that's rapidissima or super quick: "Schiacciata di zucchine" which is like a flat bread with zucchini (courgettes).
My version is plain but you can be creative and add whatever you fancy to it like onions, tomatoes or other vegetables and if you fancy something more substantial add some cheese too.
If you prefer a more crunchy and thin schiacciata instead of a soft one (like this one) you just need to use a larger baking tray.

- Cook Time : 35 minutes
Wash and slice the zucchini as thin as possible. Use a mandolin if you have one.
In a bowl mix the flour with the water and the salt. Then add 3 tbsp of olive oil.
Add the sliced zucchini and mix well.
Pour the mixture on a well greased rectangle baking tray ( my tray was 35 x 27 cm - 13.7 x 10.6 inch). Drizzle the top with olive oil and sprinkle with Parmesan cheese (optional). Cook at 200C - 392 F for 30-35 minutes.
