Apple and yogurt cake with coconut

I have a lovely recipe for you today.
An apple cake made with natural yogurt which helps in keeping a moist consistency, and coconut flakes which show nicely in the middle of the cake when you come to slice it.
This is done by making layers with the pastry and the coconut in the middle and finishing off with apples on top.
It looks quite attractive, it is easy and most importantly it is seriously good!
- Prep Time : 20 minutes
- Cook Time : 45 minutes
Ingredients
- self raising flour - 300 g - 2 1/2 cup
- eggs - 3
- lemon unwaxed or organic - 1
- desiccated coconut - 50 g - 2/3 cup
- sugar - 160 g - 3/4 cup
- butter - 75 g - 1/3 cup
- natural yogurt - 200 g - 0.82 cup
- apples - 4 (medium size)
- milk - as needed
Instructions
Whip the egg yolks with 120 g of sugar, add the yogurt, the melted butter, the flour, the zest and juice of the lemon. Mix well.
Peel and cut the apples into thin slices then add 2/3 to the mixture, stir well. You need to get a smooth consistency but not too runny, add a little milk only if the mixture feels too dry.
Whip the egg whites to a firm consistency with the remaining sugar. Add the coconut and stir well.
Grease a round baking tray (about 20 cm diameter) or use a silicone one, put 3/4 of the dough on the mould then place the coconut mixture on it.
Put the remaining mixture on top
and finally the remaining apples. Cook for 40-45 minutes at 180C or 350F.
When the cake has cooled down you can sprinkle it with icing sugar if you like.

A wonderful recipe! It looks so delicious! I love coconut especially at this time of year, so festive and it reminds me of snow…Love the way you placed all of the apples so pretty on the top. It looks so lovely when it bakes, and then when you cut it the apples on top are on each slice. BTW, I had my crochet group over and I made the Ham and Cheese Puff Pastry. I used sesame seeds on top, and I changed the hard cheese to mozzarella cheese. It was hard for me to roll up but I did it. It came very good, everyone loved it, but it looked strange, not as perfect like yours. But I think I just need to practice a bit on the rolling. I am going to try it again…No photo, because it really didn’t look like yours. But the taste was great. The mozzarella melted and that was really good. So thank you for a yummy recipe.

Oh thank you Dottie for try the roll out! Maybe you can try adding less filling to it next time. Sometimes if the bits of cheese are too big or if the roll is overloaded (and this is easily done I know!) it is harder to roll it up. I think it is great with mozzarella.. I would use it everywhere..lol.

Another gorgeous creation you have presented us with today Alida. You are so talented! The pictures are so helpful. I just happen to make fresh yogurt today. It will be ready for eating tomorrow and for baking too. I have a “healthy” chocolate cake in the oven right now but when that cake is fini, I would love to bake this cake for Marion.
