Apple crusted ricotta tartlets with no refined sugar

Hey, I have a guilt free tasty treat for you today!
Pop your apron on and get your taste buds ready for these apple and ricotta tartlets made without flour - prep time 20 minutes.
You need some sweet apples like Gala. Peel them and use them as a base to make your tartlets.
Spread a delicious perfumed filling with ricotta and raisins on the apples, sprinkle with cinnamon and then in the oven for 30 minutes. They will puff up and make a great yummy bite to go with your tea or coffee. All of this with just a little honey to sweeten them... isn't that great?
If you don't like raisins simply leave them out or swap them for other types of dried berries like goji.
I have to say these were really yum and they disappeared really quickly!

Ingredients
- apples - 3 small
- ricotta cheese - 250 g - just over 1 cup
- honey - 2 tsp
- cinnamon - to sprinkle
- vanilla essence - 1 tsp
- orange organic or unwaxed - 1
- egg - 1
- raisins - 90 g - 5/8 cup
Instructions
Peel the apples, cut them into quarters, remove the cores then thinly slice them.
In a bowl mix the ricotta with the egg, the orange zest, the vanilla essence, the honey and half of the raisins.
Put the peeled apples into the base of 10 or 12 well greased tartlet tins (this depends how large your tins are, you can use disposable ones too if you prefer) then pour the ricotta mixture on top. Sprinkle with the remaining raisins and a little cinnamon.
Bake for 30 minutes at 180C or 350F until golden.
