Apple Puree Cake fat and sugar free

I know you might think a cake without fat or sugar is not a cake! My family was demanding a sugar fix and complaining of my lack of baking in the the last couple of weeks. I think a break from sugar for at least part of January can only be a good thing after all those food binges over Christmas!
As a compromise I offered my children this pureed apple cake which I have lightly sweetened with honey. The apples are pureed in a processor and combined with yogurt; this will give a soft and moist texture without the addition of oil or butter. The sultanas on top become crunchy and sweeter in the oven with the addition of the honey on top making this cake moreish and addictive too!
I will certainly make it again as it is all gone already!

- Cook Time : 40 minutes
Ingredients
- apples - 6
- sultanas - 4 tbsp
- desiccated coconut - 2 tbsp
- vanilla extract - 1 tbsp
- organic lemon - the zest of one
- natural yogurt - 200 g - 7/8 cup
- eggs - 2
- honey - 4 tbsp
- self raising flour - 170 g - 1 + ½ cup
- cinnamon - 2 tsp
Instructions
Peel the apples. Remove the core, put 3 of them in a food processor with the yogurt and reduce them into a puree
Put the puree in a bowl, add the eggs, then the vanilla extract, cinnamon, 2 tbsp of honey, lemon zest, 2 tbsp of coconut and finally the flour. Stir well
Pour the mixture on a baking tray over a sheet of baking paper
Slice the remaining 3 apples into thin slices and lay them over the mixture. Scatter the sultanas over the apples and pour 2 tbsp of honey over the apples
Cook for 40 minutes at 170C

That is a fabulous recipe Alida – want tot make it straight away. Annoyingly, I’ve just made the last of our apples into apple puree WITH SUGAR – aghhh!
You state 4 tbsp of honey for the recipe, but I can only see that you used 2. Am I missing something?
Thank you Choclette! I am pleased you like the recipe. I am the one who is missing something here. I forgot the honey and I have amended the recipe! I have used 2 tbsp of honey in the apple puree and 2 on the topping. I was surprised by how moist and soft this cake was and it tasted so good too! I will try with different fruits too next time.
