Apple Rose Cake

Soft, simple and delicious, I made this cake quickly for my children yesterday. They really love coming home from school and find a nice homemade cake still warm from the oven.
Nothing beats apples: they are great in cakes!
- Prep Time : 40 minutes
- Cook Time : 1 hour minutes
Ingredients
- self raising flour - 300 g
- caster sugar - 180 g
- butter - 150 g
- vanilla extract - 1 tbsp
- eggs - 3
- apples - 3
- water - 4 tbsp
- brown sugar - 4 tbsp
- amaretti biscuits - to decorate
Instructions
Peel the apples, slice them thin and cook them for 10-15 minutes in a sauce pan with 4 tbsp of water and 2 tbsp of brown sugar. They need to soften up a little.
Whip the eggs with the caster sugar
Add the flour, the vanilla extract and the melted butter, stir all the ingredients well together and pour them into a greased round baking tin.
Roll the apple slices to make them look like roses and lay them over the mixture. Put some amaretti biscuits (optional) around the roses and sprinkle with brown sugar
Cook at 170C for about 40 minutes until golden
