Asparagus and prawns nibbles

Spring seems to have arrived in the UK: it's finally sunny and warm! We have had such a long and cold winter and feeling the sun on your face seems like a blessing.
I have been feeling really lazy recently, enjoying the garden surrounded by all those daisies which seemed to smile at you. My garden is packed with daffodils, tulips, primroses, violets... you can feel an instant uplift just by looking at them.
Today I have used asparagus again but just for a quick nibble. I have made these puff pastry rolls ideal to go with a glass of Prosecco as an appetizer. Prawns and asparagus seem to be going well together.
- Prep Time : 30 minutes
- Cook Time : 25 minutes
Ingredients
- cooked prawns - 150 g
- asparagus - 15
- puff pastry - 1 roll
Instructions
All you need is a roll of puff pastry, prawns and asparagus.
Shell the prawns, peel and cook the asparagus for a few minutes until tender
Unroll the puff pastry on your working top and cut out 15 rectangles
Put an asparagus and a prawn over each rectangle
Roll the pastry inwards
Cook for 15 minutes in a hot oven at 200C. Serve warm

puff pastry is so versatile and one of the few dough that I don’t mind buying (it takes so long to make!). love this idea, still reasonably healthy and so delicious!
