Today I made a recipe I really liked on Tesco's website: baked fish with tomato and herbs. This is a perfect example of Mediterranean food perfectly suitable even if you are on a diet.
You can use any type of white fish you like and it only takes 15 minutes to prepare. Definitely a great recipe if you don't have much time on your hands and you want something healthy!

Preheat the oven to gas mark 6, 200°C or 390F.
Fry the onion with a tbsp of olive oil for a minute
Add the garlic, stir, then add the tinned (or fresh) tomatoes and let them bubble away together. Add the cherry tomatoes and simmer for a few minutes, until they begin to soften
Add half the oregano or basil and stir. Season and pour the sauce into a large baking dish. If you have bought one whole fillet chop it into chunks
Lay the fish on top and scatter over the remaining herbs. Season and lay a piece of sliced lemon on each fillet. Sprinkle some olive oil and bake for 15-20 minutes or until the fish flakes when you press it
Great with green salad and bread or boiled potatoes. I find it even better with an extra drizzle of olive oil too!
