Berries and mascarpone fresh and easy dessert

Something delicious, quick and no bake?
If you love fruit then you will love this one!
An easy dessert made with berries, mascarpone cheese, fresh cream and finger biscuits. Simple ingredients but lots of taste!
Use frozen berries if you cannot find fresh ones... any berries you like: raspberries, blueberries, blackberries..they will all work very well.
I can still find some blackberries in the woods over here so I am making the most of them. Cakes and desserts with fruit are my absolute favourites.
- Prep Time : 20 minutes
- Cook Time : 10 minutes
Ingredients
- mixed berries (of your choice) - 300 g - 3 cups
- ladyfinger biscuits - 200 g - 7 ounce
- mascarpone cheese - 200 g - 2 cups
- fresh whipping cream - 150 ml - 5 fluid oz
- powdered sugar - 50 g - 3/8 cup
- vanilla essence - 1 tsp
- To soak the biscuits:
- water - 100 ml - 3 + 1/2 fluid oz
- berries - 100 g - 1 cup
- lemon juice - 1 tbsp
- sugar - 50 g - 3/8 cup
Instructions
Put the berries with the sugar, water and lemon juice in a pan and cook them for about 10 minutes.
Then whiz them
Mix the mascarpone cheese with the powdered sugar, the vanilla; whip the cream and gently add it to the mascarpone.
Dip the biscuits into the berry sauce and line them up on a serving dish
Put some of the mascarpone mixture on top and some fresh berries.
Continue making layers until the end of the ingredients. Finish off with a layer of fresh berries and if you have some berry sauce left over pour it on top.
Put it in the fridge for at least an hour before serving.

Funny, I made a mixed berry “tiramisu” in exactly the same way for my birthday last year. Only difference was that I used the usual egg instead of the cream and that I dusted the top layer of mascarpone mixture with unsweetened cocoa. My guests were thrilled with this (new to them) taste sensation. This is a fabulous recipe I can gurantee that 🙂
When we had it I could’t believe how nice it was. My children have asked me already to make it again. Next time I will some cocoa on top too. You are a good cook Elisabetta.
