Bresaola and Parmesan parcels, a quick and easy starter

It is hot and sunny out there and who wants to spend ages in the kitchen with weather like this??
So, here it is a quick but tasty cold meat starter or light lunch perfect for those hot summer days.
Bresaola is Italian cured beef which is lean and tender with a sweet, musty smell. It is very light so it is perfect if you are watching your figure and getting ready to wear your bikini.
A few rocket leaves, some Parmesan shavings and a drizzle of olive oil will make these parcels very tasty!
- Prep Time : 10 minutes
Ingredients
- bresaola - 150 g
- rocket leaves - 50 g
- Parmesan cheese - 30 g
- olive oil
- lemon juice
- chives
- pepper - a grind
Instructions
In a bowl mix 1 tbsp of olive oil and 2 tsp of lemon juice.
Lay the bresaola slices on your working top and brush them with the mixture.
Put a few rocket leaves and Parmesan shavings on the bresaola
Roll the bresaola slices to form a bundle and firm it well with a chive leaf.
Sprinkle with some more olive oil and a grind of black pepper if you like. Serve with lemon wedges.

Oh they look lovely Alida! I haven’t had Bresaola in a really long time. Probably since we use to spend our weekends in Brooklyn. I’m sure I wouldn’t find it here in PA. We do have Prosciutto though. In a pinch I’m sure I could make these lovely little parcels using Prosciutto:) Thank you so much for sharing, Alida…You always make me so hungry for Italian goodies, lol…
Oh yes of course! Prosciutto is a great alternative too! Love anything with prosciutto 🙂

What a beautiful dish with all the Bresaola wrapped up inbetween the lemon wedges. Wow, this one brings back memories, haven’t had this in many, many years. You are correct, this makes a yummy, way to enjoy a lunch especially in the hot weather, no one wants to spend the day in the kitchen cooking up a storm. The flavors all wrapped up must be like fireworks going off in your mouth. Also, I love how you bundled it together with a chive leaf, very creative… A great share..thanks…

This looks great! We used to eat a lot of bresaola when we lived in southeast France as there was a massive Italian influence there. Pinning it now to try out.
