Chicken Breast Fillets with Sage for a quick lunch

This won't take you longer than 15 minutes. It is a classic Italian way to do chicken breasts.
Italians usually prefer the dark meat of the chicken and usually do something different with the breast.
One way is to cook it in a pan with olive oil and herbs. This is a last minute and tasty way to enjoy chicken. You can serve it with salad or with shredded raw cabbage which is in season now.
Instead of sage you can use rosemary instead if you prefer.
- Prep Time : 15 minutes
- Cook Time : 15 minutes
Ingredients
- chicken breasts - 4
- olive oil - 4 tbsp
- flour - to coat
- sage leaves
- salt and pepper
Instructions
Cut the breasts into fillets, then rub them with salt and pepper
Roll them into flour
In a pan pour 4 tbsp of olive oil and put it on a source of heat
When the oil is hot lay the fillets on the pan with the sage leaves on them
Cook for about 10-15 minutes turning them on both sides until golden.
I love them with raw shredded cabbage. Make a dressing with olive oil, a drop of vinegar, a pinch of salt and mix it all well in. So tasty.

I personally prefer dark meat of the chicken as well, but this dish is definitely a great treat! I love sage along with many other herbs… 🙂
