Nothing elaborate here, just a simple chicken recipe which can be done in a relatively short time.
Of great effect though!
Combining Parma ham or similar (such as prosciutto from my region - San Daniele) to chicken, seems to give this dish a bit of a kick and make it quite interesting.
The mushroom sauce gives it that final touch. You can decorate the dish with green beans and serve it with potatoes for a complete meal.
I would definitely like to do this for a dinner party.
- Prep Time : 20 minutes
- Cook Time : 30 minutes
Sprinkle salt and pepper on the chicken breasts. Lay the spinach leaves on them.
Then lay the ham on top of the spinach and roll it up tight.
In a pan put a tbsp of olive oil and when hot seal the chicken until golden. Turn the heat down and cook for 15 minutes until the chicken is cooked.
Whizz the mushrooms, leaving some aside for decoration and make a puree. Add 2 tbsp of olive oil to the sauce and stir it in.
Cook the potatoes in cold salty water and boil for 35 minutes. Drain and serve it on the plate with the chicken which you can slice and accompanied with the sauce.
